When it comes to wedding cakes, couples have developed a decidedly daring taste for the unexpected.
Think exotic flowers, fruit, profiterole mountains, layers of every kind of cake, cupacakes of every size and colour!
That's not to say that traditional cakes don't still have a firm place in everyone's hearts. A classic sponge wedding cake dressed in crisp white icing makes a great statement and always tastes top.

Size and colour are key considerations.

Wedding Cake Colours and Toppings
It is traditional to choose colours on the cake that reflect your wedding colour theme. Strong bridesmaid colours look fansatic and this can be reflected in your wedding cake design.
Strong colours are often chosen by couples getting married abroad but having a reception at home. They want to bring an element of their wedding home with them.....shame it's not the sun!
Flowers such as orchids, lilies and hibiscous flowers are popular and stunning flowers, and roses always look clean and stylish.
Fruit is a popular summer choice. Whether it's strawberries dotted on top of cupcakes or cascades of berries down the tiers or fresh lemons and limes, fruit adds a tasty twist for the summer months.
Novelty Cake
Commission a creative cake designer to make you a wonderful novelty wedding cake - a great idea if you're having a themed wedding. You might choose to have a cake with your own photo in icing or images of the sea, a stack of suitcases or sydney opera house; a talented cake-maker will be able to show you a selection of designs and work with your ideas.

When should I order my wedding cake?
Whatever you choose, order your wedding cake in good time. Four to five months before the wedding is ideal. A multi-tiered cake can take months as it will need to be made and iced in different stages.
Making the cut
You don’t have to have a wedding cake at all, but it is traditional for the couple to formally ‘cut the cake’ while everyone looks on and cheers. The wedding cake is in fact meant to be good luck as it’s an age-old symbol of fertility. Tradition also says you should keep the top layer for your first child’s christening cake, but only if it’s a fruit cake tier.
The cake is traditionally cut after the speeches, or you might even like to wait a little longer into the evening. If you are planning to save on wedding breakfast costs and serve your cake as dessert, the cake will need to be cut before the wedding breakfast is served, to enable it to be divided into portions in time for pudding. Ask your caterer about providing cream, ice cream or a sauce to accompany it.
